This hearty Italian bean soup warms you inside and out. It is thick, rich, healthy, and satisfying. When you cook it, your house will be filled with the scent of herbs – oregano, thyme, and basil.
My family likes this soup. It is nice for a cold day to keep them warm. And it is very healthy. The soup has vegetables, white cannellini beans, ham, and stewed tomatoes. The vegetables are sautéed in butter with onions and garlic. And I recommend topping it with fresh parmesan cheese and parsley.
I serve this soup with lots of sliced garlic bread – to soak up every drop at the bottom of the bowl. And when it’s reheated the next day it tastes like you just made it.
You’ll need these ingredients for the soup.
Here’s how to make it.
Chop the vegetables and prepare all of the ingredients. Rinse and drain the beans. Remove 1½ c. beans to a small bowl. Mash them until smooth. Set the mashed and unmashed beans aside.
Heat butter in a large 5 quart pot over med-high heat. Cook vegetables, garlic, herbs, seasonings, and ground pepper for 15 minutes. Stir every 3-4 minutes.
Sprinkle flour evenly over the top and stir to combine. Stir in ham, tomatoes, broth, and mashed beans. Increase heat to high and bring to a boil.
Reduce heat to low; cover and simmer 15 minutes. During the last 5 minutes, stir in remaining beans. Taste to check if there is enough salt and pepper. Serve in bowls and sprinkle each with cheese and parsley.
Now it’s time to snuggle together and warm all of our little toes by the fireplace.
